I believe it's still possible to achieve this in Windows 7, however Microsoft has removed functionality making it harder. When I moved to Windows 7 I found Google Apps Standalone, which essentially installs Chrome application shortcuts for each Google service (mail,docs, etc). You can download it here http://pack.google.com/intl/en/pack_installer.htm...
Also there's Google Toolbar, which can set Gmail as the default mail client, and there's Gmail Notifier http://toolbar.google.com/gmail-helper/notifier_w...
Alternatively, if you're in Firefox you could also edit your settings (about:config in the address bar). I was able to edit the default Gmail url so it opened with Google Apps rather than Gmail.
I would recommend avoiding registry editing, but there's various threads on Google help about what values to add/modify.

Thanks for this post, worked like a charm in Windows 7 for me.
Regarding editing the file type entries: It is a shame that Microsoft took out the ability to do that, but you can do it with a third party tool. I used "Creative Element Power Tools", File Type Doctor.

@xceptional
I had a feeling…from the screenshots I saw, it looks they made it so 75% of the functionality is lost.
